:: a week of christmas { christmas cookies } ::

Well it is officially friday and that means all the schools are closing today for the festive holidays! So i thought i would share a delicious christmas cookie recipe with you that is dead easy and child friendly! This recipe is a family recipe that my mother made religiously when we went on holiday! { we were one of those families that took half the house with us when we went on vacation! } The perks of this holiday hoarding were that the fridge was always jam packed with containers full of cookies! To me these cookies have great memories and associations with christmas! Thats why i have to make them every year! It’s part of my christmas rituals!

A little tip: if you are seaside, pack a bag of them for the beach! there is simply nothing as delicious as these cookies when you are getting out of the ocean after a long swim!

A little random fact: these little cookies have the randomest name ever, how me and my mother found it year after year i have no idea! These days, it goes by the name christmas cookies, since i am always baking them for christmas!

CHRISTMAS COOKIE RECIPE:

250g butter
1/2 cup sugar
2 cups dried fruit { cake mix }
2 pack of Marie biscuits

In a pot melt the butter and add the sugar, stir until it is dissolved
Add the cake mix and stir for 3 min
Take the pot of the heat and stir in the crushed Marie biscuits!
Make sure the mixture is compact when you ball it in your hands, if not just add more melted butter!
Spread the mixture into a oven pan and press it down, or roll it even with a rolling pin!

Thats it!
Let it cool for an hour and a half in the fridge, cut into squares and enjoy!
